This recipe is so easy I’m not even sure it counts as a recipe! Andy loved it and asked me twice whether the rice was “healthy rice.” In other news, he has dropped 15 lbs just from eating our healthy dinners.
1 lb boneless skinless chicken breast, cut into bite size pieces
1 tsp paprika
1 tsp salt
1 13 oz package of smoked turkey sausage
1 bell pepper, cut into strips
1/2 and onion, sliced
1 TBSP fresh thyme
1 10oz package frozen cauli-rice (available in the frozen vegetable section at many grocery stores)
1.) Sprinkle salt and paprika on chicken breast. Spray large skillet with cooking spray and cook chicken on medium heat until cooked through.
2.) Meanwhile, cut turkey sausage into bite sized slices. Add turkey sausage, onion and bell pepper to pan.
3.) While chicken, sausage, bell peppers and onion are cooking, heat cauli-rice in the microwave.
4.) Add thyme to chicken/sausage mixture.
5.) Serve chicken sausage and vegetable mixture over cauli-rice.
