AMF and I have been craving pizza. Ive come across a few recipes for pizza made with a cauliflower recipes and decided it would be a perfect Friday night splurge that wasn’t too much of a guilty pleasure. The secret to a more bread-like cauliflower pizza crust is to wring out the cauliflower crumbles before combining them with other ingredients.
Main Dish Ingredients
1/4 cup shredded parmesan
1 tsp garlic sald
1 TBSP fresh chopped oregano (or use dry jarred oregano spice if you cannot find fresh)
Your favorite pizza toppings (I use reduced fat mozzarella and turkey pepperoni with chopped green peppers, olives and pineapple)
1.) Cook fresh cauliflower crumbles until very soft. I cooked mine for 12 minutes in a large bowl in my microwave. I stirred the bowl of cauliflower crumbles halfway through cooking
2.) Allow cauliflower crumbles to cool so that you can handle them without being burned.
3.) Place cooked cauliflower on a dish towel (a tea towel worked best) and wrap in tea towel. “Wring out” tea towel so that you remove as much liquid as possible from the cauliflower. The volume of the cauliflower crumbles should be about 1/3 of their original volume. The more water you remove, the more bread-like your pizza crust will be.
4) Combine dried cauliflower, eggs, parmesan, oregano and garlic salt.
5.) Preheat oven to 400 degrees. Line a cookie sheet with parchment paper. If you do not use parchment paper, the crusts will stick.
4.) Form 2-3 crusts in your favorite pizza crust shape. I was able to make two adult sized personal pizza crusts and one child sized crust. Crusts should be around 1/3″ thick.
5.) Bake crusts for 30 minutes. Remove from oven and top with your favorite pizza ingredients. Bake for an additional 10 minutes or until cheese is bubbly and browned.
