Who says a recipe with bacon in it can’t be healthy? There are around 80 calories in 2 slices of bacon (including grams of fat and 6 grams of protein). The trick is to limit the amount of bacon in each serving (I used 2 slices per chicken breast in this recipe). The recipe does not call for any other oil or butter since the chicken in wrapped in bacon, there is plenty of delicious bacon grease.
Main Dish Ingredients
2 thin cut boneless skinless chicken breasts (I like True Goodness by Meijer brand)
4 slices uncured organic bacon
Dash of pepper
Dash of salt
1 tsp refrigerated minced garlic
Side Dish Ingredients
1 12 oz packaged frozen butternut squash
1 TBSP Olive Oil
Dash of salt
Dash of Pepper
1 TBSP Pure Maple Syrup
1.) Preheat oven to 400 degrees. Prepare a sheet pan with aluminum foil.
2) Season chicken with salt and pepper. Rub minced garlic on top of chicken breast. Wrap each chicken breast in two pieces of bacon and place on prepared sheet pan.
3.) Thaw butternut squash. I thawed mine in a casserole in the microwave.
3.) Place thawed butternut squash on other side of sheet pan. Drizzle with olive oil and salt and pepper. Toss butternut squash until evenly coated. Drizzle with maple syrup.
4.) Cook butternut squash and chicken for 20 minutes. Yum! Bacon!
