Mardi Gras ends today. If you didn’t make it to New Orleans this year, try this gumbo. It’s sure to warm you up. This dish uses shredded rotisserie chicken. I purchased a large rotisserie chicken from Costco and served it with mashed cauliflower. I used the leftovers to make this gumbo the next night.
2 TBSP olive oil
3 TBSP whole wheat flour
1/2 cup diced onion
1/2 cup diced celery
1/2 cup bell pepper slices
1 TBSP minced garlic
1/4 tsp salt
1/4 tsp pepper
1/2 carton of chicken broth (I use Pacific Foods Brand)
1/2 10 oz package of frozen okra
1 12 oz package andouille sausage, sliced into 1/4 inch pieces
1 cup shredded rotisserie chicken
One package frozen caulirice. I use Green Giant Brand.
1.) Heat oil in a small dutch oven on medium heat. I have this one. Add flour and cook, stirring constantly for 2-3 minutes or until flour is golden brown.
2) Add garlic, onion, celery and bell pepper and stir until vegetables are coated in the flour mixture. Cook for 10 minutes or until the vegetables are soft. Add salt and pepper.
3.) Add broth, okra, sausage and chicken. Cook 10 minutes or until warm and thickened.
4.) Heat caulirice according package directions. Serve gumbo over caulirice.
