Craving pizza? Love mac and cheese? Don’t want all the calories and carbs found in a regular pizza or bowl of mac and cheese, try out this recipe. The recipe uses turkey sausage, turkey pepperoni and cauli-crumbles instead of pasta.
Main Dish Ingredients
2 14oz containers of fresh cauli-crumbles. I use this kind, available in the produce section at Meijer
1 lb lean ground turkey. Use Italian style if you can find it.
1 TBSP butter
2 TBSP whole wheat flour
1 cup skim milk
1.5 cups of your favorite marinara sauce
1 Cup mozzarella cheese
1.) Cook Cauli-crumbles to a macaroni like consistency. I microwaved mine in a glass bowl for 3 minutes, stirred and then put them back in the micro for another 3 minutes.
2) Cook ground turkey in a large cast iron skillet until browned and crumbly (5-6 minutes). Remove from skillet.
3.) Melt butter in skillet. Add flour and cook for 2 minutes, whisking constantly. Add milk and marinara. Cook for 5 minutes while whisking until mixture is thickened. Removed from heat.
4.) Stir in 3/4 cup of cheese. Stir in cauli-crumbles and ground turkey.
5.) Top with remaining 1/4 cup of cheese and turkey pepperoni. Let cheese melt and serve.
