AMF rated this at a 10/10 and said it was one of the best meals I’ve made in a long time. Then he poured hot sauced all over it. Shrug.
1 lb boneless skinless chicken breasts. I always use the “thin cut” natural selection from Meijer because they are proportioned perfectly for one serving.
Salt and pepper to taste
1 TBSP olive oil
1/2 red onion, sliced thin
5 TBSP white balsamic vinegar
3 TBSP honey
5 springs Fresh Thyme
3 nectarines, pitted and cut into slices
1 TBSP fresh lemon juice
1.) Preheat grill to 350 degrees. Sprinkle Chicken with salt and pepper to taste. Grill chicken for 3-4 minutes per side or until done. Remove from grill and keep warm.
2) Cook onion in olive oil in a medium skillet over medium heat until soft (5-8 minutes).
3.) Add vinegar, honey and thyme. Bring to a boil and then reduce heat back to medium-low and simmer for 5 minutes or until slightly thickened.
4.) Discard thyme, add nectarine and lemon juice. Cook for 2-4 minutes or until nectarines are soft.
5.) Serve sauce over chicken. We had ours with roasted broccoli.
